Food Friday: Chocolate Nice Cream--SO GOOD!!!

 Nice creams are so good.  At least, so far there has not been a nasty one that we have made.  This time I am following the recipe by Krocks in the Kitchen.   More or less.

The PACC version of Chocolate Nice Cream is so similar to the one Krocks in the Kitchen made.

Chocolate Nice Cream

1 quart freezer bag of frozen banana chunks
1/4 cup Hershey's cocoa
1/2 cup plant milk (I used Chocolate Almond Milk-the last box we are going to buy!!!  Too many nasty things in it, though it does taste better than many of the bad-for-you plant milks [because of the extraneous stuff that is in them].)

This time I brought the bananas (and strawberries) out of the freezer and let them begin thawing.  Eventually I decided I wanted chocolate ice cream instead of strawberry ice cream since I had eaten not even one bite of non-vegan items including not oil or fats of any kind, SO...chocolate ice cream. Anything chocolate is such a treat!

In the blending jar of a high speed blender place the cocoa powder and the plant milk.  Pour in the slightly-thawed banana chunks, put on the top, insert the tamper, and begin blending.  It took me about 80 seconds but I should have gone a little longer and tamped better because there were two pretty small banana chunks at the bottom at the end of the 80 seconds.  Well, they are in the freezer now!

Using a smallish ice cream scoop, I pulled out two scoops for each of us and put in a freezer container the remaining ice cream. I could really have eaten ALL the rest of the ice cream myself (if I had fought off Dear One who liked it pretty well himself!!!) but, since I am seeing the doctor tomorrow morning and want to have a nice blood reading, I refrained.  Tomorrow we can eat it for supper...


This is the ice cream after sitting a few minutes on the counter while I cleaned up the kitchen.  So good.

If you don't have a high speed blender, this can be done in a food processor.  You really MUST let the frozen bananas or other fruit thaw for about 10 minutes.  No less or it won't work...I already blogged about that some time in the last month or two.

Munchie Monday: Strawberry Chocolate "Nice Cream"

Apparently 19 July is National Ice Cream Day.  In the days leading up to Ice Cream Day I saw several ice cream recipes.  The one we made was this one:

Strawberry Chocolate Nice Cream

3-4 bananas frozen in 1 inch chunks--about 3 cups or a little more
2 cups frozen strawberries
1 very soft, very ripe banana that needed to be used up
1 teaspoon maple syrup, if wanted
a few dark chocolate chips


Put the bananas, strawberries, and maple syrup in a food processor and process until soft-serve consistency.

LET FRUIT THAW FOR TEN MINUTES FIRST!!!!  I saw that mentioned, but was so souped up for the fruity treat on a very hot day that I tried it immediately.  BAD IDEA!!!  Let the frozen fruit thaw.

What happened was that after about 5 minutes of starting and stopping the food processor to scrape down the sides I finally gave it up and pulled out the VitaMix.  In less than a minute (and using the tamper because the fruit was still frozen) we had wonderful soft-serve dairy-free ice cream.  It was SO GOOD!

Sadly it went down the gullets before I got a picture.  The bowls looked very pretty with the strawberry pink deliciousness and a handful of chocolate chunks on top.

Food Friday: Quick and Easy Chocolate Nice Cream

Some people in our house are missing some to the treats we used to have on a more regular basis.  I have been freezing very ripe bananas over the last few months but have not been using them up.  Today I decided to do use two of them.

Quick and Easy Chocolate Nice Cream

2 bananas, frozen then sliced
1 Tablespoons unsweetened cocoa
3+ Tablespoons Nutella
1/4-1/2 cup almond milk

Put all the ingredients in a high speed blender and blend for about 45 seconds using the tamper to push the ingredients into the blades.  This makes just enough for two medium bowls.


This slid down our gullets very fast!  Next time I think I will double the recipe to make it easier on the blender. 

It is my feeling that if you don't have a high speed blender you could use a food processor for this.  You might need to double the recipe in the food processor.

Very tasty.  I mean, how can you miss with Nutella?!
